My Corny Tip

I am not a huge fan of canned corn. I think it resembles chewing on a latex balloon so every summer I attempt to buy fresh corn when it's the sweetest and freeze my own. I am sure many of you do the same.

When I was a kid my father made this nifty little contraption that was a block of wood with a nail sticking up out of it. We would cook the corn, skewer the cob on that nail and than cut the kernals off. There was always a pool of corn juice to wade through afterwards.

I came across this tip many years ago and have used it ever since.

Use an old angel food cake or bundt cake pan. The cob stays in the hole, the pan catches all the kernals. Place corn in bags, lie flat to freeze. Wala! Corn for the winter.

That is such a good idea! And just so you know what an amatuer I am....I'm referring to freezing the fresh corn :) So cutting on a bundt pan is like a hallelujah moment for me.
